Surround sound is mixed down
Films and recordings in MKV often carry 5.1 surround sound, and an MP3 holds two channels, so the sound is mixed down. We tried an MKV with six sound channels: the MP3 came out as ordinary stereo, with the sound in it.
Several sound tracks
Some MKV files hold more than one language or commentary. The MP3 is made from the first sound track in the file, which is usually the main one.
